What is Chicken Shashlik?

The popular grilled or skewered dish known as chicken shashlik, often spelt "shashlyk" or "shishlik," has Caucasian and Central Asian origins. Traditional ingredients include chunks of marinated chicken, but you can also use beef, lamb, or even vegetables.
Small, bite-sized chunks of chicken are often sliced up for shashlik, which is then marinated in a tasty concoction of yoghurt, garlic, lemon juice, olive oil, and various spices. Although the marinating procedure can vary, it typically entails letting the chicken sit in the flavours for several hours or overnight.

After marinating, the chicken pieces are strung on skewers in between chunks of tomatoes, bell peppers, and onions. The chicken is then cooked thoroughly and has a charred, smoky flavour by grilling these skewers over an open flame or on a barbeque. The flavour and scent of the food are unique thanks to the grilling method.

Depending on regional variations and individual preferences, chicken shashlik is frequently served with a variety of sides, including rice, pita bread, or flatbreads, as well as sauces or condiments such yogurt-based sauces, tzatziki, or spicy chilli sauce. The fragrant and tender grilled chicken makes it a favourite dish in many Middle Eastern, Central Asian, and Eastern European cuisines.

Ingredients:

-Boneless chicken cubes ½ kg (1 inch size)

-Soy sauce 1 tbs

-Vinegar ½ tbs

-Red chilli crushed 1 tsp

-Black pepper powder ½ tsp

-Salt ½ tsp or to taste

-Chicken powder 1 tsp

-Garlic paste 2 tsp

-Cooking oil 2 tbs

-Capsicum cubes 1 Cup

-Onion cubes 1 Cup 

-Tomatoes deseeded & cubes 1 Cup 

-Cooking oil 2 tbs

-Garlic chopped 2 tsp

-Ginger chopped 1 tsp

-Tomato ketchup 1 Cup

-Chilli sauce 3 tbs

-Soy sauce 3 tbs

-Vinegar 1 tbs

-Red chilli powder 1 tsp or to taste 

-Black pepper powder 1 tsp

-Salt ½ tsp or to taste

-White pepper powder ½ tsp

-Sugar 1 tsp

-Water 1 Cup or as required 

-Chicken stock cube 1 

-Cornflour 1-2 tsp

-Water 3-4 tbs 

-Green onion leaves chopped 

Directions:

-In a bowl,add chicken,soy sauce,vinegar,red chilli crushed,black pepper powder,salt,chicken powder,garlic paste & mix well,cover & marinate for 25-30 minutes.

-In a frying pan,add cooking oil,marinated chicken,mix well & cook on medium flame for 6-8 minutes then cook on high flame until it dries up.

-Add capsicum,onion,tomatoes,mix well & sauté for a minute & set aside.

-In a wok,add cooking oil,garlic,ginger & mix well.

-Add tomato ketchup & mix well.

-Add chilli sauce,soy sauce,vinegar,red chilli powder,black pepper powder,salt,white pepper powder, sugar,mix well & cook for 1-2 minutes.

-Add water,chicken stock cube,mix well & bring it to boil.

-In cornflour,add water & whisk well.

-Now add dissolved cornflour,mix well & cook until it thickens.

-Add cooked chicken with vegetables & mix gently. 

-Garnish with green onion leaves & serve!
